Booyeah bunnies, back from the lovely eastern Europe, Hungary to be precise, and you know what, it was AMAZING! I enjoyed it so much, so very very much! I went with the two Aoifes and they were such good company, easy and fun to travel with, I'm so glad I went. We saw so much and had so much fun and brought home some brilliant memories, I'm so so happy that I went, what an experience, just wow.

annnnd, I'm back at work and I reckon that I'll start back with the old art and get my finger out slightly, I'm looking forward to things a lot.

hopefully heading out to ardmore in a week or two for a few days with some of the girls, might go on my own if no one can join me, but they all said that they'd be able to more than likely

also, got a place on the bus to oxegen, have my tent, am sorted and really pumped! w00t!!

sooooo, off to Budapest on Monday with both Aoifes, can't wait, I think it will be one of those great experiences that bring about a certain amount of realisation. I had one of those recently, and it was really comforting, nice even, but surreal.

It's funny how the view you have of yourself changes and you barely notice it happening, it's one of those things that I never thought happened but it does, and it's so obvious when you look back over your life.

I've decided to go to America next summer on my J1 visa (if I can afford it), this country doesn't hold much for me at the moment, I need to travel, realise that there is so much more out there and experience it. I want to meet new people and enjoy new routines and things that I never thought that I could work into my life. I want to be somewhere were people have the capacity to dream so much more and to reach for them, to really, really reach for what they want. Not just say that they are and rest on their heels. Ireland is a trap for that, and I run the risk of falling into it. I need somewhere fresh, something new to explore and be amazed at the normality which some people take for granted. To see something as simple as bread being wrapped a different way or a plant growing wild that could never survive naturally back home.

I know that Ireland will always be my home, and I am so proud of my roots but I need to see the world, to explore and look. I need to be able to look back and say, well, I may not be the most intelligent but I've had my eyes opened wider than most peoples through experiences that I created for myself.
I don't want to say to my children I could have lived my life completely, I want to say, I did live my life completely, and I enjoyed every second of it.

ok, so here goes, prepare to zone out, click away or even plan the next assassination attempt on the suthors life

Sooooooo, I rise at 06:30 in the morning and think, hey, I have loads of time, sure, it'll be fine. So we leave the house at 08:00 having finished my packing form the night before and had 2 pieces of nummy toast, the soda bread kind, sooooo good, and Mum liike hops into the car all wooohoo-ish and we hit the road.
One problem...
both Mum and I had forgotten that the schools were no longer on holiday and guess what time we had decided to hit the road at? BOOM! Rushour.

SOOOOOOOOO, 2 and a half hours later, we finally get to Shannon airport and its great, I get checked in straight away and there are no queues, wait a sec, ruth, where are all the people, I mean, this is a huge flight, where are they all, and hang on a minute, why is the flight taking over 8 hours, I mean, it should only be seven hours long.....yes ruth, you are a retard, it does go via Dublin, but WAIT it's not actually your fault, no, because aer lingus bever stated it in the booking....AREHOLES!!!

But anyway, I get through customs through the gate on the flight find my seat, so far so good, take off in shannon land in dublin, wait...and wait....and wait.....

When we finally get to Chicago it finally hits, I'm actually here, I will be seeing Erik and not only that, I've done most of it on my own! HA! Booyeah, so I skate the next few hours on adrenaline which brings me up to here, and now, with Erik training for cycling behind me and Muse playing and I am happy.

I love my life at the moment! I really do! Okay, so I've put on a few pounds, but that's under control (am going to give my body a SERIOUS haul over when I come back from America, oh yes, it shall be bikini worthy, and not only that, it will be TONED!)

I'm not actually being sarcastic...

SO! New jooeeeerrrrbbbb that I start on Thursday and I'm looking forward to it, back in the big smokey city so I'm going to be happy there are good hours and the pay is alright, so I'm positively fantabulous about that, ja!

Got my good friend Mr Mic so things are going swimmingly at the moment and will, hopefully continue to go on swimmingly for another 13 days, 8 hours, 24 minutes and 51 seconds and then it will go, well, better than swimmingly, I mean, I hope, no, I know it will!

Did my last Chemistry MCQ (Multiple Choice Question style exam, not as easy as it sounds when your getting negative marking....) on organic chemistry and I think I might have just passed, it's the most difficult section of the course, without a doubt, so I'm okay with that.

I have to finish up odds and ends and for crying out loud TIDY MY ROOM! before something on the floor eats me

I'm actually not joking. I'm always really awake in the mornings because in order to get out of bed I have to do a long jump style leap to prevent breakages of cds or landing on heals of shoes (really, really painful).

2 nights ago I made scones, but with a twist, they were scones of the ruthable kind...do I hear screams begging for a recipe?? Do I? Well then, I had better please the masses then

SCONES, of the nummy variety (this is done from memeory so be kind!), modifed by ruth, for your eating pleasure....mmmm

___________________________________________________________________

you're gonna neeeeeed:
5 tablespoons milk
1 egg
110 grams self raising flour (if you use plain, you'll need extra baking powder)
140 grams wholemeal flour
1 teaspoon of baking powder (2 if you use plain flour)
1/2 teaspoon salt
50 grams butter or margerine
20 grams of sugar
25 grams raisons or sultanas*
35 grams dried apricots*

* - you can substitute pretty much any dried fruit for these, just make sure that you like them, you can also put in nuts, another nice one is cherries

First thing, put on you oven to 400 Fahrenheit = 200 Celsius / Centigrade = 6 Gas Mark, you NEED to preheat, you get crap scones otherwise
Next thing you HAVE to do is grease your tin, you'll forget about it, I know, I promise you, you will forget.

You got those done? Proceed....

okay, so first of you need to beat an egg and about 5 tablespoons of milk together in a baby little jug, the little jug is important, well, not really, but it was fun, anyway...

next, you need to get your flour sorted, now because of the interesting digestion system in our family, I use brown flour in most things, but in this I used

110 grams of self raising flour (or plain with baking powder added, about a teaspoon) and
140 grams of brown, wholemeal style flour, the stuff you'd make a nice brown bread with, with the brown flour add in about another bit if the old baking powder, makes it floaty light.
All of these should be sieved into a fairly nice sized bowl (the brown flour won't sieve very well, do the best you can and put in the grainy bits anyway, it's just to introduce air into the mixture)

important for all you salt addicts, now you add in the salt, you know yourself how much, bout half a teaspoon, to taste, but I wouldn't reallllllly taste the flour, I mean, you could, but, well, raw flour probably isn't the best for you

now, add in 50 grams of butter or margerine and rub it in till its like breadcrumbs

okay, so overview because I'm losing track of it all, we have so far:
1 jug with milk and egg
1 bowl with both brown (wholemeal) and white flour, baking powder, salt and butter

okay lets get going again.

now weigh out about 25 grams of raisins or sultanas or any dried fruit that you like and I also added about 35 grams of chopped dried apricots (sooooo good!), the apricots are a great flavour with the wholemeal flour

also, weigh out about 20 grams of sugar, preferably caster sugar, and add the fruit and the sugar to the flour, make sure to mix gently, you need that air in there, don't just mash it up!

okay so you need to make a little well in the centre fo the bowl, and then you add the egg and milk mixture slowly so as not to make it overly gooey, you can keep a little for glazing aswell, it makes a lovely finishing touch, simply super!

ok, so fold all that together, keep that air there, and then start kneading (it should be a dough by this stage), turn it onto a floured surface and knead it until there are no more cracks, roll it out till it's 2 cms thick (NO LESS!!!) and cut out with cutters or something (never twist the cutter when your cutting, just go straight down and up, otherwise you end up with wonkey scones)

if you want you can glaze at this stage, I, personally, love to put the glaze of egg and milk on (from a couple of steps previous) and then sprinkle with oats, makes them crunchy!

put them on the old baking tray, the greased up one and bake at gas mark 6 = 400 Fahrenheit = 200 Celsius / Centigrade = Moderately Hot oven for about 15 - 20 minutes until golden brown

then leave for about 5 minutes on a wire rack, cut open and serve with butter and jam, and maybe a little cream and a big mug of tea, nummmmy central.

Have been feeling great lately except for the minor stumbling block last night but hey, what can you do, its not sorted but its on its way and I'm feeling happy so thats good too. Work at college is going to be kicked up a notch because I can't actually afford to go out anymore and I have got to save so its probably a good thing. I'm also planning on getting the wheels on the website moving, get the cogs into motion and what not.

I can't believe my first year is nearly over, I mean in a way it fels like I just did my exams to get here and it feels good to know that I can do it if I need to, I've just got to keep my attitude right, thats half the battle, right? And I am, and its good and thats all there is to say ont the matter.

We also got a new washing machine, it has the royal stamp of approval on ti so Mum decided to call it Elizabeth, go figure!

Am feeling a tad hormonal, this here period coming up is going to be a pain but at least its only once a month and Mum is being really sweet, I don't want to bother Erik with it though because it's just something I have to put up or shut up with!

Am worried about him, I wish I could comfort him in person, this is hard on the heart not being able to be there for him but I know it will be okay. I just know it.

I'm also feeling run down but accomplished due to my most excellant CV distribution today, I hope I get a job before long, and I will because I'm being positive about it and that's half the battle!
